For the batter:
2 eggs
2 tbsp Langnese Bee Easy Wild Flower Honey
200 ml milk 3,5 % fat
200 g flour, type 405
1 tsp baking powder
A pinch of salt
Rapeseed oil for frying

For the pancakes, separate the eggs and beat the yolks with Langnese Bee Easy Wild Flower Honey in a mixing bowl using a whisk or hand mixer until creamy.

Gradually mix in the milk.

Then add the flour, baking powder, and a pinch of salt and stir until a smooth dough is formed with no lumps.

Beat the egg whites with a hand mixer until stiff peaks form.

Fold the beaten egg whites into the batter with a rubber spoon shortly before frying the pancakes.

Brush a nonstick pan with rapeseed oil and add three or four small round blobs of batter to the pan over medium heat. Turn after about three or four minutes and fry the second side until golden brown.
